Me and my friend had a lot of fun playing through Dungeon Defenders together. Online, co-op, hack and slash with tower building elements. There's a lot of additional paid DLC which can either be a good thing or a bad thing depending on how you look at it, but if you run through the base game together on the various difficulties there's a lot of content and/or fun to be had.

I'm looking to fill the void of two player co-op games too. I've had a lot of fun with Monaco and Trine 2. They aren't hack & slash (though they do have combat elements) but they are a lot of fun with two people.

Trine 2 is mostly a puzzler, but it does have a bit of action and some boss sequences. It's a pretty fun romp and it is one of those co-op games where you can mess with the person you're playing with which adds an extra layer of fun if you're playing with someone you know.

Monaco is a top down heist game. It's very charming and probably one of the better co-op games I've played that has come out recently.

I would caution that NWN and Icewind Dale are both very slow compared to Diablo II or Torchlight. It's less action hack and slash, paced more like a tabletop D&D game. Not quite as slow as a turn-based game such as the old SSI Gold Box D&D games, as it is realtime.

Specifically, when you get into a fight, you click where you will walk or what you will attack. After that your character does its own pathfinding and attacking. You have clicky special abilities you can use from a hot bar, spells, etc. And you can of course change targets, pull away out of combat, barge through to get to an objective. But there's nothing like jumping in to attack an enemy and leaping to the side to escape a Lightning Bolt, or leaping through a trap with perfect timing.

D&D Online (the Stormreach one, DDO) is actiony hack and slash. And you can get away with playing it with just her and you in the party if you like. But it's far better with a group of friends, probably in the same guild. I suggest reading the wiki for how to play and how stuff works, but NOT reading any of the dungeons in the wiki. It's much more fun to discover that stuff on your own.

If you can somehow find a way of acquiring it and making it play, I have many fond memories of doing co-op with my dad in Hexen 2.  I might as well throw in my endorsement for Diablos I and II for somewhat the same reason.

Terraria is more of a build-em-up than anything straightforward, but it does have some interesting bossfights and dungeon delving for the cooperative player.  It's far, far more slow-paced however, as most of your time is spent digging, building, decorating and so on.

Icewind Dale/Baldur's Gate and their ilk are also, really, not for the faint of heart.  Very slow-paced, very complex, and things tend to take a long time.  If you're in for a bit of a gaming haul it can be excellent fun to play with a group of friends, but from the sounds of it it's not what you're really looking for.

Titan's Quest is a Diablo-like, but I personally didn't care for it quite as much...  The skill/class building is even more unforgiving than Diablo 2, where you can very easily build yourself into a corner where you'll be ineffective against anything and everything from then on out.  You're basically forced to pick one of the few approved skill builds in order to take on much of anything.  Also, the action is slower-paced than Diablo 2.

There's a niggling sensation in the back of my skull that I know about some other decent right-in-the-action co-op games (seeing as that's generally what my dad would play), but I can't quite seem to think of any right offhand...  I'll make an appearance later if it comes back to me.

Hmm... there was a freeware dungeoncrawly hack'n'slasher out there called Egoboo.
It was ages since i last played it tho...

http://egoboo.sourceforge.net/

Its pretty similar to Spiral Knights but it's far less forgiving and class based.

I also recommend Torchlight 2.
