I'd like to recommend Paper Mario: The Thousand Year Door (Are game titles supposed to be underlined or ""'d or what?) It's a really interesting take on the Mario franchise, and changes up the gameplay to something completely different (turn based combat), as well as taking an interesting view on the turn-based combat genre by adding interesting mechanics, as well. That, along with the GBA game Mario and Luigi: Superstar Saga, are both pretty great games.

A few that haven't been mentioned are Billy Hatcher and the LOTR games. these aren't masterwork pieces of gaming, but they aren't bad either.
I'd like to back this up. The LOTR games (okay I only played The Third Age and Return of the King) are great. TTA is an RPG like Final Fantasy (I believe Penny Arcade did a strip about it) and RotK is a hack-n-slash ARPG. Sort of. They're quite fun.

If you've got friends over, X-Men legends I and II were pretty good for 4 drunks blowing up stuff. Technically there are enemies, but the real goal is to just run around trashing everything for money while making fun of whoever everyone else played.

I'd like to also throw my vote in for LoZ: Wind Waker.  It consumed one of summers.

I will balance this out by saying the two towers gamecube game is a similar hack and slash ARPG. Again, not super amazing good but probably very cheap at this point and certainly not bad.

I was a big GameCube player back in the day.  The essential titles are probably Metroid Prime, Wind Waker, and Kirby Air Ride.  Prime 2 and Twilight Princess are good games, but are a bit more repetitive and less inspired than their predecessors.  Games that might be enjoyable but are a bit more subjective are Mario Sunshine (acceptable, but a bit of a lull between 64 and Galaxy), Melee, Fire Emblem, and F-Zero GX (if you think you're a badass).

Hoo boy. The Gamecube years were my favorite as far as console gaming goes. Here's a partial list of recommendations:

Fire Emblem: Path of Radiance: An enjoyable turn-based strategy game based around careful unit placement and keeping track of all of the variables. And shipping. Your units are all unique, irreplaceable characters (that you can develop relationships between, increasing their abilities) and if their HP goes to 0, they're gone. Forever. Story is fairly enjoyable as well.

F-Zero GX: AKA "Nintendo please make another one why won't you make another better F-Zero what is your problem". Racing along looping, twisting tracks in an anti-gravity vehicle alongside 29 other competitors at ludicrous speeds. Ridiculously fun, ridiculously fast-paced, and the AI actually plays fair. There's a story mode (nothing special, tbh, but allows you to unlock new vehicles) as well as the grand prix tournament style mode, and multiplayer. You can even design your own vehicles, though the system is somewhat limited.

Metroid Prime: Metroidvania platforming and puzzle solving combined with first-person shooting - not CoD-style cover-shooting either, but based more around using your superior agility to move around enemy attacks. Works surprisingly well, but if you own a Wii you might just want to get the remake. Some really, really nice environmental effects, like raindrops gathering on your visor if you look upwards.

Tales of Symphonia: Probably the best-known JRPG on this console. Epic length, fun battle system, plenty of depth and replayability. Plenty of side things to do alongside the main quest as well.

Skies of Arcadia: Legends: Narrowly beats out ToS as my favorite RPG on the Gamecube. Not quite as long (but still lengthy!), makes up for it by having a far more interesting world, more likable characters, insane super moves, and a unique battle system for ship-to-ship battles. Graphics are nothing to write home about, but perfectly workable. The Legends remake also includes a wide number of extra things to do that never made it into the original Dreamcast game.

Resident Evil 4: Sure, the plot is crazy as all get-out. But as the first RE to include actual intelligent enemies (for a certain definition of intelligent...), it made for a refreshing change from fighting zombies. Keep in mind though, that it's not really a horror game anymore. Just try to tell yourself that when a madman wielding a chainsaw is chasing you...

Eternal Darkness: Sanity's Requiem: Oh god, this game. Where RE4 sacrificed horror in favor of action, this game went in almost the exact opposite direction. The enemies and characters are unsettling, the plot twists and turns and is frequently depressing, and you are almost guaranteed to be freaked out at least once, often when you least expect it. Best played in the dark, both in terms of your playing space and in regards to spoiling yourself.

Paper Mario: The Thousand Year Door: Fun and quirky, as might be expected from a Mario game where everyone is literally two-dimensional. The various partner abilities and the transformations you gain access to are used to great effect when puzzle solving and exploring, and the writing is frequently hilarious.

Time Splitters: Future Perfect: Not the best FPS out there, admittedly. However, I loved the sheer silliness of the characters and plot, it has some really nice moments where you cooperate with your past and future selves, and the multiplayer is a blast. It also has one of the best level editors I've seen on a console game (until Halo and whatever came around) that even allows you to make custom stories, if you're so inclined.

Damn, there goes my main recommendation. That game had such cool actiony gameplay. Great story, too.

I tried a demo of it. "Tried" being the operative word. Perhaps my memory is fuzzy, but I seem to remember that it struck me as fairly dull and not all that fun.

It was a shame because, like you said, it looked cool.

Geist had a lot of promise, but fell flat. It has some neat moments I suppose.

I loved Harvest Moon: A Wonderful Life and heartily recommend it. Harvest Moon: Magical Melody was better from a game mechanic point of view but I think A Wonderful Life had a better story. I actually cried manly tears of manliness because of a certain plot development, and misted up every year afterwards from a minigame resulting from that development. I still have mixed feelings about said minigame but I haven't forgotten it, that's for sure.

Harvest Moon: A Wonderful Life Is my favourite gamecube game and one of my favourite games from my childhood. I never got far but Its still one of the best games I've played in a long time and I'd go back and play it but sadly the disc broke...

I enjoyed it so much at one point I used to read the manual every night until I could wake up and do school then go and play it as soon as possible.

Maybe I'll go and hunt down another copy or use an emulator.

Then again maybe It'll ruin the sense of mystery and wonder and endless enjoyment I had when I played that game for the first time back when I was kid.
I guess Its better to leave it alone.

Something that deserves mention but hasn't been yet is Custom Robo. Quite a fun game, a fairly nice story, and a nice multi-player feature, it's quite a bit of fun.

Once again I vote Tales of Symphonia up there, as well as Fire Emblem: Path of Radiance. Baten Kaitos was quite a bit of fun, though I think the second one was much more fun then the first, the dev team really took to heart all of the complaints the players had about the first one.

For other ones that haven't yet been suggested I suggest:
Beyond Good and Evil - I think you can get this on steam now as well. It's a fairly fun romp with your generic staff-wielding, female journalist-type, but it's quite fun nonetheless.
F-Zero GX - a fun Captain Falcon racing game, especially with multiple players. It is a game that gives a nice impression of speed for your cars while still maintaining a playable control system. The single-player story mode can be a bit demanding though, take it or leave it.
Final Fantasy: Crystal Chronicles - a nice solo-player game. Was even more fun with friends, but sadly it utilized a game-boy advance link system for it's multiplayer that meant you needed a game-boy advance/SP and a link cable for every player.
Legend of Zelda: Ocarina of time - a great classic, was actually voted Nintendo power game of the year several times. If you don't have it on 64 get it here.
Pokemon Colosseum/XD - If you are a Pokemon fan then you might want to check these out.
Wario Ware Inc. - If you like to play with others this is the game for you. Chock full of tons of hilarious mini-games that are worth hours of fun. Not really a game for solo-play though.

Oooh, yeah, custom robo was great. Got a little repetitive after a while but great while it lasted.
