Insanity does not automatically follow immortality. It's more of boredom/loneliness caused by immortality, and there are ways around this.

In my case, it's because Nuriel wants to look like an older teenager. (Also, she looks more like 18.)
And going by your logic...well, magical girl alternate forms always look young.
