Weapons have their own properties that define what kind of wounds they produce. See weapon_default.txt.

Regeneration, pain receptors and other medical properties of tissues are defined in tissue_template_default.txt. The physical stuff e.g. how they behave when they're struck with a big hammer and so on are more towards material_template_default.txt.

item_weapon.txt, btw. Also, "kinds of wounds" haven't really been around since 31.01 came out 3 years ago. There aren't any raws to actually edit these kinds of things directly, you have to edit the things they rely on, which would be the default material templates, tissue templates and inorganic_metal.txt.

Wounds are related to the creature getting hit. Look at creature token for pain receptor, tissue healing, etc. You can also edit tissues but a multiplier can be applied from the creature too.
