Okay, so I'm still fairly new to fortress mode. Watched tutorial videos, started six or seven forts across two computers. None have died because none have a lot of time sunk into them. I'm usually an adventurer type.

On one particular fortress, I have a guy with mechanics and a guy with carpenter. I need one to survive later and one to survive now.

I was quite horrified to note that my mechanic and carpenter don't seem to qualify for "Needs Carpentry" or "Needs Mechanic" to create the workshops they'll be laboring in. In other words, I CANNOT CREATE BEDS, WELLS OR DRAWBRIDGES. PANIC!

Why won't they build the workshops? I've heard Dwarf Therapist helps them do their jobs in this regard but Lazy Newb Pack is broken on my computer. It won't open, says Dwarf Fortress Directory is missing.

Sounds like they don't have the actual jobs enabled.  You can manually toggle that in DF if you have to.  Check the DF Wiki for instructions.  Good luck!

Get Dwarf Therapist it makes assigning jobs and keeping track of them much easier.

You can find it in the mod list under essential utilities. Like it says in the list, Dwarf Therapist makes Dwarf Fortress playable, you need it.

OP mentioned that LNP wasn't working, but I'm not sure if Dwarf Therapist was tried outside of the LNP interface.  OP, you can open Dwarf Therapist on its own by going to the folder LNP folder you downloaded and finding it in Utilities.  Check and see if that works for you.

Nope. None are on break, either. Carpenter Dwarf is standing there awkwardly. Eventually mechanic dwarf started working, but he stood there for almost a day, not on break before he decided to work.

Having the same problem with my fisherdwarf now. I've got all this raw delicious fish and narwhal to eat, but the fisherdwarf isn't setting up his shop. He's sitting in the meeting room staring off into space.

It is probably this, look at the "u" screen, it will tell you what they are currently doing.  (Or look at the "j" screen and it will tell you that the job is active, but has no one assigned.)

I will run the experiment to completion anyway, however. Even if the only reason why there is a punctured equilibrium in the fortress is because I have been brutally butchering babies
EDIT: I just remembered that dwarves can't equip halberds. That might explain why the squads that use them always die.

I'm pretty sure those allow multiple labors to build them, so those specific labors aren't necessary.  Fish cleaning and butchery would be more sane choices.

Some darves are lazy as all hell.  Check the unit's description for each dwarf.  If it says something about poor focus, that is your problem.  Dwarves with poor focus should only be given low priority jobs because poor focus will increase the amount of time taken before the dwarf picks up another job.  Also, some dwarves are given to procrastination, but I think that may just be flavor text.

this discussion of LNP and Therapist is pretty irrelevant to solving what should be a simple problem.  "needs carpentry" or "needs mechanic" means those must be built by a dwarf...any dwarf... that has those labors enabled.  Beyond that the build job must not be suspended, and whatever dwarf takes the build job must be able to path to the building material (wherever it may be).  This absolutely sounds like either a burrow/pathing problem, OR its an issue with dwarves being busy.  Particularly for the fishery, fishing tends to take up a lot of time, if you have one fisherdwarf its likely he's too busy fishing to bother building the shop.  If you enable the labor on like 5 different dwarfs, and nothing happens, then you know you have an accessibility error.

Okay, just tested.  I was able to:
  • build a butcher's shop with only Butchery enabled
  • build a butcher's shop with only Small Animal Dissection enabled
  • build a fishery with only Fishing enabled
  • build a fishery with only Fish Cleaning enabled
  • build a fishery with only Fish Dissection enabled

It's an or clause.
