Stay there a couple weeks or maybe a month to basically learn about the local politics, and any other important people there. Continue training with Barrick regularly, though it'd be better not to practice magic in case people try to scry on us. Be sure to listen to Ritalia if she wants to talk about her upcoming marriage.

^ Agreed with above. Why not speak with Penrod. Try to get to know him better, maybe we can learn a lot faster with him about his countries',politics, culture, history, and language. Perhaps we can also teach some of our language to him too.

My only thought is to not stay longer than the summer, don't want the weather to affect our travels, plus I'd rather not be away from court for too long, given our ambitions.

You decide that it certainly couldn't hurt to stay a few weeks and get the lay of the land, so you make arrangements to house and feed the troops while you are here, and tell Penrod that you hope to spend time with him and his household. Penrod seems happy enough at the prospect, and jokingly adds the condition that he be allowed a rematch with your sister.
Ritalia is relatively quiet when you speak to her, though she assures you she is not unhappy with how things are going, but asks that you take the time to visit occasionally when she is married.She continues to just barely beat her future husband at chess and other games of mental skill, but Penrod is a gracious loser, and even seems pleased at her skill.

You try your own hand at chess with Penrod to break the ice and allow for conversation, and find that your games drag on almost frustratingly long. Each of you is adept enough at reading the moves of the other that each game is mostly just a series of stalemates until one of you loses patience and attacks disastrously.
Conversation goes well enough, though Penrod is fairly guarded with you, seeming to treat you as a potential adversary. When you ask him about his eye he tells you he lost it in a no-holds-barred joust a few years ago. He seems uncomfortable to say more so you let the matter drop, you can't help but think that such an affair would be needlessly dangerous.

You spend some time at Penrod's court and find it much more minimalistic then the one at home. There are fewer courtiers and in general less nobles, and men seem much more combat ready, dressed in practical armor. From what you can tell the current subjects on everyone's minds chiefly concern military preparations. Vassals arrive pledging military forces and others ask for the aid of Koringberg in shoring up defences or preparing to muster against local threats. Perhaps this is always how things are, but things definitely seem in turmoil.
On the bright side, your Adalbert vocabulary on military matters has improved somewhat, and you can now reliable talk about troop movements and logistics without embarrassing yourself.

You make sure Barick and Elwer continue to train you in weaponcraft. Barick begins to vary the different styles he uses against you, fighting with sword or club or sometimes even two weapons at a time. You're also beginning to learn not to treat your weapon and shield as entirely separate, that both can be used in conjunction with each-other in defensive fighting.

Several weeks have passed and except for the frenzied hustle and bustle of the Koringberg court that has not abated nothing interesting seems to have happened, or you haven't noticed. Should you consider leaving this place for home? Or is there something you feel like you ought to do first?

No. I suppose there are similarities, but I'm fairly certain angry birds doesn't let me charge into a battalion of knights with a car made of circular saws.
