The niece of the duke?

The Duke is the highest charge available, and can either be the Royal Duke (AKA it's royal blood) or it can not be Royal (but still it's still the highest available charge!)
As a niece of the duke, then it means her father is the younger brother of the duke, or her mother is the younger sister of the Duke. That means, unless mistaken, that she may either be of royal blood...but I doubt it...or still pretty high.
Well. We've got ourselves a target gentlemen!

Tell her you don't like much the social courtings and would rather like to learn how to hunt...

Just as a note, there's a serious businness in the medieval times between male and female hunting. Ladies often hunted with a falcon, which mostly comes down to having a good bird and waiting for it to catch stuff. Meanwhile, men engaged in the more dangerous forms of hunting, like boars, bears, and other larger wildlife.

Hence I propose we don't embarras ourselves.

Nopes, dukes don't need to be royal blooded but usually are the highest tier before kings ( sometimes archdukes or other titles exist. It varies from country to country and time period. )

Niece of the duke is indeed a very high profile target. What I like that she is a hunter, that's not an appropriate for a lady (even a falcon hunting, doubt that she hunts in another way) , that means that her parents may have problems finding high ranked husband for her

And hunters tend to not care too much about living conditions...

Asking her about what she hunts and saying about our forest is a good course of action. Especially if our forest are full of her preferred prey.. Saying about our hunters is no-no Why should she get interested in some commoners hunting for food with completely different method?

There's a serious difference between different types of hunting. Btw, falcon hunting was accepted behaviour, and compared with other kinds of hunting was actually quite comfortable. I mean, Ladies even had an assigned species of bird with which is was acceptable for them to hunt. Doubt there'd be problems. Seeing the circumstances and the medieval times, it's highly possible she's engaged.

I'm taking this into account.

"Hm. Yes. She does have quiet a few suiters. I believe I have met the count... I don't mean to speak ill... but if she is anything like her father however... Well, lets just say I have no interest in the creature. I have seen the garden from which the flower has grown."

Comment on her sport saying that you have no women who hunt in your land, noting that you have never seen the bird, much less would know how to use one. The idea interests you as you have only seen the quarry of trappers and huntsmen yourself and "training a bird to act as a hound sounds remarkable. Please, how does one train such a beast? We rarely use creatures to complete tasks in Feroshire, save for the odd pack mule or possibly plowing. Tell me about your last hunt, M'lady."

Intrigued by falconry, you ask her how she started the practice. She gets a slightly forlorn look in her eyes as she speaks. "My fiance... my former fiance gave me my first falcon several years ago."

You can't help but give her a questioning look, as you are not exactly a master of tact yet. She continues on somberly. "Yes, I was engaged to wed Count Fursten. He... he was killed in the recent fighting... two years and three months back, to be precise."

Recovering quickly, you offer your condolences and smoothly move onto another subject. As dinner is called for, she gives you a warm smile and says she hopes to see you on the dance floor. You flush slightly, as you don't know any courtly dances, but nod and smile in return.

At the dinner, you are seated next to Sir Denton. As you eat, the talk turns to your conversational companion of a few moments ago. "Yes, a sad story about that one. Her mother is the youngest sister of Duke Erran. Her fiance was killed in the same battle as her father, and her mother has been in shock ever since. Lives on her brother's estates, now. Hasn't spent a lick of time finding a suitable match for the lass. Quite a shame that such a beauty is unwed. If I were a younger man..." He glances momentarily at his wife across the room, and trails off.

Would you like to ask Sir Denton anything at dinner?

I know she does. We are going to play hard to get as well as NOT LOOK LIKE THE HARLEQUIN BECAUSE WE CAN'T DANCE. This isn't your highschool prom, bros, Dancing is held highly as art here. If we screw up it may deter her. Heavily.
