It is because the Lava was very hot. That may not make sense to you but try putting ice under cold water and watch how fast it melts.

Then try putting a fire under it for the same amount of time.

The running water should win.

Mind you I don't know if this was Lava... the composition seems off.

The ice didn't melt much at all - it sublimated. Hence the pun. All of that steam was caused by the ice instantly turning to steam, skipping water entirely.
