What is more dwarfy?

Embark on a giant mountain.

Would it be more dwarfy to:
Shape the entire mountain's exterior with mass channeling, or
Encompass the entire mountain by constructing walls and buildings on its entire surface?

Don't forget to completely hollow out the mountain in the process.

I don't think he did, seeing as this is a poll for two similar choices, not a hilarious magma-related joke.
My main quarrel with this poll is that you should never have to choose one or the other, the Dwarfier option would be to do both because we can.

I was going to put in a both option but the question isn't what is the only dwarfy option but what of those two is more dwarfy

Working with the mountain, becoming its friend, then TAMING the mountain is the most dwarfy option. If thats confusing Im ofcourse speaking of the first choice.

Train it into a war mountain. Not sure about how this would be done, but I imagine it would involve some sort of internal magma/zinc combustion device that simulates evil biome clouds and many(MANY) dwarven auto-shotguns.

Have mountains been weaponized in such a way yet? If not, I've got my next project.

I would suggest a combination, carve out the mountain, and add to it where you need to (building observation decks ect).
Though I guess its more of a challenge to force yourself to work with the layout of the existing cliffs.

but yeah, weaponising an entire mountain would be the single most dwarfy thing ever...  I guess having fortifications carved all around it, drafting every dwarf into a crossbow millitia at any sign of trouble would equal a mountain that spits bolts.  plenty of cave-in traps prepped at chokepoints would give the impression of the mountain itself attacking invaders, and giving it the ability to erupt magma at various parts of the surface is a must... you know the drill.

I weaponized a mountain once... I mined out the ground level, built a support with a lever attached. Next to the support was an open, winding ramp-way a couple z-levels down to my trade depot.

We lived under-ground, far enough that the collapsing mountain wouldn't destroy anything but the trade-depot and exit to the surface.

Eventually a building destroyer came by, kicked the support, and dropped a 50 z level tall mountain on himself. It was pretty satisfying; the game ground to a 1fps halt for quite awhile though.
