Are goblin's inediate?

As stated, if I leave captives in an escape proof room, will they starve to death?

Nothing you capture will starve to death. Only dwarves and tame animals have to eat/drink/sleep.

But you can capture dwarves.  Not that it often happens on purpose, mind, but it happens.

It's useful to keep a ‼torch‼ handy.
