I certainly haven't seen many children when sent to deal with werebeasts, or when running across their lairs. I don't know of anything specific to suggest to increase the ratio of adults to children as night creatures, though, assuming you're not just exaggerating.

If your adventurer can survive until a full moon, a single werebeast isn't likely to be that much FUN...

Says who? It's trivial for a peasant to become a necromancer (if you use legends mode to find necromancy books in fortresses rather than towers), and then it's just a matter of spamming the wait command.

I was walking around a town with a HUGE population of werebeasts on the outskirts, just popping from cave to cave (they were incredibly easy to find- just leave town and you were more likely than not to stumble into one), and found several children.  That's probably unsurprising, given that there were so many.  What was neat was that several shared the same surname.  Didn't check history to see if they were actually related, but it looked an awful lot like a family of werebeasts.

Surnames are not inherited.

I read the history of one of the werebeasts I had slain and I learned that he was turned when he was attacked as a baby and a werebeast bit his eyelid off.

Got bit by a werestoat. I don't see the benefit of turning into one of those.
