I always train a legendary engraver by having him smooth my fort over time - and he only starts engraving once he gets to legendary/grand master. I made the mistake of making that lucky and ever-busy dwarf (I turn off all other labors. He spends his whole career smoothing the fort) a dwarf that likes ... cavies ... since the history was sparse on that fort I had my fort about 50% cavy. Must be interesting - walking the halls and seeing just guinea pigs in a whole bunch of different poses everywhere.

The best way to make sure you get awesome engravings of history is to run around with an adventurer doing epic things or make lots of previous forts that did lots of epic things. Then find a dwarf who likes tradition and make him the legendary engraver - he'll then prefer to memorialise history instead of the dwarven equivalent of abstract art.
