You do know cheeses were developed because cheese lasts a long time with minimal work, right? All the modern moist cheeses not so much, but a block of really dry crumbly cheddar could last for years. The primary culprit in rotten food is moisture, which is why other products like beef jerky don't rot if properly stored.
