You could also try making a Gym: A room full of screw pumps, to train toughness, and presumably cut down on fat.

Pump operating does not increase physical attributes, I'm not sure if it cuts down on the fat or not, I suspect not but I've never checked for that.

I've tried military training to increase agility, it works however it's a slow process taking several years to get to max and I've had a lot of trouble getting them to work again after (but I think that bug is fixed in .06 or for .07). Also, some dwarves due to lazy personality traits won't ever do individual combat drills anyway.

on the fat I think it's just a natural dwarf thing. Like how every dwarf has the "needs alcohol to get through the day trait", it's just how they are.
Fat short people that drink all the time. That perfectly describes this game.
