well, water evaporates when in contact with magma, but don't you get obsidian or something?

Yes. But that does mean you don't have water any-more.

I tried Caverns + Ocean out of sheer malice. Instead of pumping, though, I ran a shaft from the seabed straight down. It killed my framerate down to about 1 and made an enormous hole in the middle of the water and a tsunami of 7's in the deep.

Only took about fifteen minutes, too, so feel free to see for yourself. I forgot to make a movie.

I once drained an ocean into a cavern.  Game paused for 5-10 minutes then resumed at 5 FPS after the ocean level fell 3-4 Z levels.  A few levels of the cavern filled up but the water just drained off the edge after that, accomplishing nothing.  Now magma on the other hand...

Ditto ^_^ !

I tried to get my dwarves to put a wall up around the ocean (so it would drain dry and I could build on the seabed), but the FPS was so low that it would have taken days... Obsidian dams would have been a better approach.

What if you caved the entire sea bed into the caverns? That would give you some awesome waterfalls :P.
