but how would i get the door open to let the water through? O.o

The same way you do with a floodgate: You hook it up to a lever with a mechanism.

Basically, a floodgate is a door that 1) can ONLY be operated by mechanisms [doors can be operated by lever mechanism OR by a creature that can use doors deciding he wants to walk through it], and 2) has a 100-tick delay between the lever being pulled and the floodgate opening.
With floodgates, after pulling the lever, the dwarf can take a few steps before it opens and lets whatever fluid lurks behind it through.  With doors, the lever pulling and door opening are pretty much simultaneous.
