If I have a dining room containing more table, or a barracks containing more than one bed, or any other room containing more than one whatever makes it a certain type of room, should I make all the tables/beds/whatevers in the room into dining rooms/barrackses (is barrackses a word?) or just do it with one?

If you designate only one, but extend the room so that others are located within it, then all of the other [similar] pieces of furniture will be used for the same purpose.  So, if you designate a 5x5 barracks off of a single bed, but build 3 more beds in that 5x5 area, then all four beds would be used as a barracks.

Conversely, if you make multiple rooms covering the same area from each set of tables, the value of each room is quartered. Not that this is always a bad idea - for instance you can have nobles share a room with a really good artifact in it rather than trying to make multiple decent rooms for all nobles.

Just as a note, this does not apply to archery targets.  Each target must be designated as a room for your Marksdwarves to use it.
