Another explanation is that the Necromantic effects of turning them into Skeletons actually ADDS bones making them more accurately skeletal amalgamations. (either that or they are held up with just pure raw necromatic energy)

Afterall, skeletal sea critters have no problem walking on land.

To any Historian: YES I am aware that the term necromancy is horrifically butchered and frankly no one knows what real life necromancy was. Heck go back far enough an a necromancer would be called a Forensic detective.

A skeletal watermelon would probably just be a hollow shell filled with seeds that you can shake around and make music with.

Awesome.  But needs more evil.

Perhaps the sentient undead watermelon explodes into a cloud of deadly necro gas if shaken by a person with no sense of rhythm.  Turning everyone around into skeletal watermelons.

I for one would not want to be turned into an undead fruitgetible because I was dragged to a bad maraca(sic?) band by a friend.
