I don't quite see how you would manage to tame a polar bear- or anything, in fact. How is that done?

I'd assume, at the kennels you just do Tame Large Animal or something of that nature. If that bear has killed though there really is no point.

Keep feeding it food until it eats the food in your hand instead of the food and your hand?

check out your local kennel. Training vermin's very easy, but I haven't experimented with larger prey yet. Basic idea is thus:

1). Build cage out of wood or metal
2). build cage _TRAP_. I've made the mistake of just building a cage like I might a door. You need to go to the trap submenu of build.
3). No need to link cage_trap up to a pressure plate or lever. It'll go off on its own.
4). Lure or wait for some critter to walk into trap. You now have a wild, caged beast.
5). Take extreme care moving that caged beast around. Or save first.
6). Go to kennel. Train large animal.
7). Done.

I left some sublties out of varying importance, but that's the basic outline.

Ok, thanks. I've gotten dogs to turn into hunting/war dogs, but they weren't tame. I think. That's from memory, but I'm fairly sure they weren't.

unlimited meat without hunting, no risk of injuries!

set out a drift line trap like this:

where the = is wall, channel, or some natural obstacle.  cage traps cover the gap.  I put one trap line a couple shifts to the east and west of my main entrance, and whatever herds of animals travelling around the map will try to cross at the gap and get caged.  bring the cage inside to your kennel, train large animal.  put all your spare (tame) animals together in one cage to keep down lag.  keep one male and several females of each species.  kill adult males as needed for food (adult elephants are the best with 15-16 chunks each).  also, it seems that a caged animal has a "bait" effect on wild animals with herding instinct, so you could leave one stationed out there by your traps if you want to get them faster.
