How do enemies path into the fort?

Hey all, I am relatively new to Dwarf Fortress, and I was simply wondering how goblins (or other enemies) created paths into your fortress. How do they determine what your fort actually is? Do they simply move towards the highest value item, or a dining hall? In order to path there needs to be a specific target, so what is that target? ???

Definetly the nearest enemy unit.

Forgotten Beasts, Megabeasts, Semi-Megabeasts, and other building destroyers target the nearest destroyable structure.

Item thieves (like monkeys and keas), will target the nearest item, whether it's deep inside your fort or not.

Food/drink thieves (bears are an example) will target the nearest accessable food item.

Skulking kobolds and goblin snatchers will target your valuables and your kids respectively.

That only works if the kobolds have no access to the fort.
