You could give each syndrome or group of syndromes its own class via [SYN_CLASS:FLU], and set [IT_CAN_NOT_HAVE_SYNDROME_CLASS:FLU]. If you give the disease some element that doesn't end, like an interaction  or attribute addition, the creature shouldn't be able to contract the disease again.

I thought about giving them the syndrome for a while, but after a year they are able to be legal targets again. I havent actually started modding on it, but maybe start this evening.
