EDIT: Does "random Greek minor" count Byzantium? If so, it's certainly possible to do excellently with them. Burgundy and Lithuania I've played very successfully, Holland I have a plan that probably won't work, I've never played Utrecht or Finland, but I suspect both would be tricky.
No, I mean something like Athens or something like that. But the 'Byzies are okay too.

Or you could just fast forward time in the nation selection screen to a time Ukraine was independent.

I much prefer playing from day 1. Historical inaccuracy is more fun.
