I wasn't around before DF2010, so I'm curious as to how often updates came before 0.31.01. Were they less frequent than we have them now, as in one every weeks sometimes, or as frequent?

Between 40d and 31.01 there was a span of about two years.

In August 2006 and for a long while after that they were basically an almost nonstop flood of bugfixes and minor tweaks.  When Toady started adding in a lot of the more ambitious systems, we started to get longer waits between releases.  Of course, considering the circumstances, especially juxtaposed with other Roguelike-style dev titans (ADOM/JADE, Nethack, etc) which have gone years and years without any real signs of progress, DF fans are spoiled.
