What did I do wrong!?

Whaaaa?

If I lock up, will it go away, or am I gonna have to man up and devise some crazy trap?

It will not go away. But an Ettin is a titan, thus on the surface, so you _may_ have some luck with the next dwarven caravan (more exactly, the guards) killing it.

Or trap it.  It can be snagged in a single, normal cage trap.  Make a zoo!

To survive either for the caravan or that trap to get ready, you will need to wall yourself in (note: they are builing destroyers and will destroy doors, floodgates, etc.) or get some time by sending some dwarfs to death (attacking them without proper training and equipment is futile, rather play a game of tag).

Don't you have a standard issue drawbridge over a standard issue river of magma to avoid him getting inside?
For the records, one of the giants that attacked my fort (and I let in) tried to avoid a wardog attacking him and precipitate into the river of magma thus melting to death. Hilarious.
From the report I suppose that the dog was still attached to his arm when he fall toward his doom...

For dwarves, air is mainly thought of as something you make out of stone in order to get to magma.
