Being a plumbing enthusiast (only in DF), could I just put some pumps on the roof of my cliffside fortress, pumping either water or magma (which one works?) to push all the blood out the windows?

That wouldn't destroy the contamination, just displace and possibly extend it. Construct-deconstruct does remove it, however.

I don't see the problem with displacing it out into the desert...and then flooding the whole place until it's all off-map. Would that work?

Better idea. Steal flood gates for windows, connected to levers so they can be opened. Sounds extra Dwarfy to me.

Water doesn't seem to reliably remove blood from the tile it's on, in my experience, especially if it's on a wall.  It just spreads it.  Magma doesn't seem to do much for spatter on walls, either.
