Sometimes the only appropriate fortress mode tunes are very heavy classical music like Holst's Planets Suite, I like Mars, Bringer of War the best. Or Ride of the Valkyries, or even for self reference win; In the Hall of the Mountain King.

Most of the time though I just shuffle everything, or even the vanilla music which I actually really like.

I usually just set my entire music library on shuffle and see what it throws out on me.

Earlier today I was listening to the Hitchhiker's Guide to the Galaxy radio series, though.

So far I've found Buddhist ritual music, Brian Eno, Susumu Yokota and Coil to be among the most fitting soundtracks for DF. Another recommendation would be audiobooks.

The NES version of the game "The Immortal" has wonderful themes

"Lair of the Norlac" swimming in water hazards in the caves during adventure mode.
"I Forbid You To Come Any Closer" obvious adventure mode combat music.
"Barrel Ride" running away or performing some other frantic action.
"The Dragon" megabeasts or other tension moments.
"Arab Merchant" travel, or trading. Mostly trading and merchants.
"Puzzle" for fortress mode (fortress design can be a puzzle from time to time)
"Troll War" when your soldiers are setup and patrolling your fortress.
"Troll Territory" when your training your soldiers or equiping them.
"Egg" human towns, travel, or when you're just letting your fortress age a bit more.
