For fort mode, I'd have to say 'Steam Machine' by Daft Punk'.

Perhaps something more depressing would fit though.

I repeat Tengu, 'Gorey Demise' by 'Creature Feature' for mass slaughters, weither they happen in adventure or DF.

Lately:
Dwarf Mode: L'Arc when it's going well. P'unk when it's not.
Adventurer Mode: Anything between The Black Eyed Peas, Rammstein and Rie Fu.

For fort mode, Indiana Jones's theme, Of course. :P

But Gravey's 'Orcuviathan the Tomb Shaker' is perfect for when I'm holding off a megabeast, especially bronze collosi.

Whenever I'm working on a megaproject, I'll put on Van Canto's cover of Rebellion (by Grave Digger). Something in the melody makes it just... sound right for it. Plus, it's fun to sing along with (especially the run-diddly-dun-diddly-dun-diddly-dun-diddly-dun-diddly-dun-diddly-dun-diddly-DA-RIN-DOH-DOH bits).

Whenever a big fight comes on, I'll usually put on something suitably epic and suitably suitable, depending on the situation. Hopeless battle against insurmountable odds? The Trooper or Aces High (and if you don't know what those are, you deserve to have to look them up yourself :P). When the situation is hopeless for the other side, I'll send out my strongest machine or similar.

For normal situations, I've got a few albums I put on in the background. Nightfall in Middle-Earth in particular is pretty appropriate for a game about dwarves, and fairly difficult to get tired of.

Yeah, I just ended a sentence with a preposition. Take it.

It depends on my mood, but I find that, more often than not, I'm thinking of Slayer's song Raining Blood during adventure mode.

I have all sorts of music running in my head when playing, but for some reason (maybe after enough level grinding in the places this music plays in FFXII) I tend to think of Giza Plains more than other themes when not (T)raveling, but hunting for some things in the fields. Best applied in desert/grassland biomes; raining or not.

Actually, FFXII had a good soundtrack for adventuring. [rant] Sure, the story was sorta weak at first for the game, unless you ground through everything and the enemies and such to get the history of the game and whatnot in the bestiary and such, with the main story as a bonus feature (at least, how I observed it, which I think made the game worth it; the immersion of the game's world. Not the common reason for others, but [/rant] I liked it for the immersion it brought, and the soundtrack really helped out in that regard; reason for suggesting some of them depending on what's going on if I come up with more.).

EDIT:
Now that I come and think of it, any song that loops well would be great for adventure mode. I love video game music; and thanks to my childhood memories and the internet, I should have almost no problem finding some of these tracks to use for background music/looping themes.
