In adventurer mode you can always pull items out of your backpack. If you put multiple shields in your backpack you can pull them out and wield them all. Each shield adds to your block chance so after a while you become this unstoppable juggernaut of blocking. That is of course until a random peasant grabs you and breaks your arms.

A dirty thing to do in Adventure mode if ever you lose the use of an arm is to put whatever you just dropped (your weapon or shield that was in your now-useless limb) then take it out again. It will be in your good arm, and totally useable. Don't think this works with crossbows, though.
