They used to bug out in some older version, but no longer. They ARE sparring. It is just incredibly slow.

My champion wrestlers are now champion swordsdwarves.

Because heavy armor slows a non-Armor-User down, and they get far fewer "actions", and that would slow down both their training and combat. That's why.

And their movement speed, if they're chasing someone, or running away from it.

But both strength and the armor user skill decrease the encumbrance of the armor. A very strong and skilled dwarf is able to walk around even in solid gold armor without issue.

How do you even assign weapons to Champions? I can't use the p menu anymore

You have to use the 'm'ilitary screen, then hit w.
