There's one thing about caravans that I've observed (although I could be wrong, I haven't tested it extensively) is that they will by default bring more and more of a certain type of good (at the exclusion of other goods) if you've purchased alot of it from them before.

With the humans and dwarves, this can be offset by requesting the items you really want, but since the elves just bring 'whatever', if you buy say a bunch of rope reed cloth and wood, they'll bring alot more rope reed and wood next time, and less other stuff.
