I currently have an arena planned for my fortress

2 levels tall

Circular ring in the middle, bottom floor contains 4 barracks, each with their own "team"
Each barracks has a door leading to the fighting area of the arena.
2nd floor contains chairs/tables with open area where the fighting area is with gates/bars surrounding the edges.

The left is the bottom floor, the right is the top. The inner ring on the top will be grates/bars.

Don't forget to build a huge Fortress Treasury made out of triple thick rock walls where you will keep all of your golden and silver coins. Also, entrance traps and chained dogs.

 And don't forget to store gems/valuable metals/breeding pairs of exotic animals. And protest it with a moat. Around the whole thing. Even the underground bits.
Not just the underground, submerge it too.  Then build around it, and make a second moat out of magma.  Then put a trench around that to keep out swimming/fireproof monsters (make sure there is a choke point and traps on the inside for the flying swimming fireproof monsters)

 A grid-based sewer system, on which the blocks of the city are to be based. The sewers will start as channels in the ground, but as the city grows and the sewers get larger, you cover them with floors and use them as streets. Then flood the sewers and use them for a water supply/dump. Heck, if you could rig it you could make the water move in waves and push things around.

and any good sewer system needs a aquiduct based water system, 2 levels above the ground at least, with a realistic amount of supports. top it off by making your sewer system/aqueduct  out of lead.

Theatre, zoo, observatory with green glass dome roof. Castle. City watch houses, royal guard posts, replicas of real buildings. Cathedral (why stick with just a church?). Multi-z lvl sewer with a level of water and some walkways for the ratmen. Specialized buildings for certain families of crafters. Places to store animals.

Oooh, good idea!  Multi-level gardens if your roofs are tiered...  Could be cool.

Wait... Make the Grand Treasury, with dogs and buzzsaw traps, and make the only way in a complex series of lever pulling in order to get water to go out through some sort of cistern and fill up a pressure plate that will open the grates to the Trasury. Bonus points if you go back as a human lasher.

And please, no inuendos over this.
