This is one of the most detailed methods of getting past an aquifer that I have seen yet. Someone needs to stick this onto the wiki.

Sorry for the necro, but this post is still being linked to by the wiki.

I tried this and the method does no longer seem to work, at least not when the layers above the aquifer are sand/clay. The caved-in material becomes part of the aquifer in that case. We might have to update the wiki?

edit: here is the reason it didn't work for me:
"Falling Terrain: Falling Soil layers will change into the lowest soil type on map (source:wiki)"

Did you actually dig into them?

I've seen that before too, and also thought "oh, I guess it did not work, the tiles still flash as wet", but then have it actually worked when I dug in.

Yeah, I did. By the way, I wanted to breach a three-layer aquifer, so I followed the guide in the OP, but made the square two tiles wider on every side.

I caved a layer of white sand into the aquifer layer, which consisted of Loamy Clay IIRC. The white sand transformed into damp loamy clay, becoming identical to the rest of that (aquifer) layer. I channeled out the middle part as in the picture and started to pump it dry, but to no avail. It kept refilling. So it appears that the caved-in part really gained the Aquifer property.
