Why do we make chairs/tables of stone then?

Because those can just be flat and hard.

Beds have to be soft, which is why the soft part is made of a kind of Soft Cork

a gcs blanket dyed a soothing blood red would look very nice in my dwarves' bedrooms, i think.  guaranteed for a pleasant night's sleep. and making matresses, blankets and pillows would sure give the clothiers and leather workers something to do besides make bags   :D  i hate socks.

Eh, I hear they sometimes actually have that sort of thing as orthopedic.  Just don't get the one lined with obsidian chips.  XD

The dwarven economy is just a stand-in, from what I understand. As it is, it represents an actual economic system about as well as poison ivy represents a salad.

I'm thinking multiple levels of sleep quality.

-Sleeping on the floor
-Sleeping with a blanket (just cloth)
-Sleeping in a hammock (cloth + some support structure made of wood or stone)
-Sleeping on a pallet (cloth filled with straw/sawdust i.e. plant matter/wood)
-Sleeping on a mattress (cloth, filled with feathers and maybe metal bedsprings)

It'd be a good way to encourage early cloth making. As is I tend to let it sit quite a while.

I had a rhyolite artifact bed.  Near worthless, since the creator didn't pick up other materials, but fun nevertheless.

I agree that bedding would be a nice addition, though, and would make metal or stone beds more believable and viable.
