I hope transgenderism is added soon too, to be able to train my surgeons, suturers and wound dressers in between sieges.

I don't think that dwarven surgery is quite... nuanced enough for anything remotely delicate. They can take things out and stitch you up and that's about it.
But what dwarves do typically have in fiction (and presumably in DF) is a kind of innate magic with metalworking. I'm sure there's a least one mythological story that involves a magical dong being made, and it's probably within dwarven ability to tune it to a person's mind and graft it on.
