Jamacian goat curry is quite special (with a side of Red Stripe), but my time in Jamacia is quite... "hazy".

As a result of the aforementioned Red Stripe, I guess. :P
Or other stereotypical Jamaican things.

It took a whole half hour before someone invitied me to a party. I also accidentally ate tripe on the same trip. I do not reccomend tripe, unless you like eating decaying rubber.

:( I like tripe. But I've only had it in Asian cooking so I don't know what it's like in other cooking styles

I can't speak for the flavor, but if the tripe you had had the texture of rubber, it was likely either undercooked or overcooked. It should be springy, but not rubbery.

A lot of the "variety meats" as I once heard them described are very temperamental, and people prepare them improperly, and then decide they're not any good.

Not meat related, but I used to despise green beans, because all I'd ever had were the boiled, overcooked ones that came in cans. A few years ago I tried them fresh, where they were added to a stew at the very end of the cooking process, so they were still bright and green, and it was a revelation. They were amazing.

I once ate an entire baby octopus. That's about it for non-standard meat for me.

Mm, lamb isn't rare in the States either, unless perhaps if you live somewhere without a single Mediterranean, Middle Eastern, or Indian restaurant and only a bare-bones grocery. It's also everything that beef wishes it was.

It is rare in the sense that people rarely eat it and you rarely see it in restaurants.

In the same way that I could easily buy Cow Tongue.

I'll have to see if I can easily buy lamb, cause if I can then there's really no excuse not to try it.

I'm a big fan of eating insects. Not like, picking them up off the ground and popping them in the mouth, that's gross.
I mean like, getting farmed ones and cooking them and eating them as part of a meal.
They're delicious, nutritious and better for the environment.
