What does "striking" training do?

When my military has a "striking training" session, what skill does that help? Fighting? Whatever weapon the teacher is using? Along those lines, I've never seen a "axe training" session...

I think it relates to punches and kicks (or other natural weapons a creature has, if using a mod).  There is actually a striking skill if I'm not mistaken.

Agree, plus that's about the LAST thing *I* want to see from this kind of game - author spending valuable development time on useless graphics.

Correct, and the former is called "Striker" while the latter is called "Kicker".
