I'm looking to fight groups of bandits or even goblins but it's difficult to find them.  As the adventurer I'm playing now, I'm mostly doing quests that have me killing trolls and the like and I'd rather fight opponents who use weapons.  What's the best way to do that?

Honestly, walking around randomly will very rarely make you hit a bandit camp. Just keep slaughtering creatures until one of the townsfolk gives you a quest to kill a bandit.

If you didn't know, you can spam the "service" button to get tons of quests at once.

Just wait till you get an ogre family of about 20+ angry shreks trying to hack you to bits with cleavers and knives.

Villages tend to have plenty of weapon-wielding opponents...

Recruit about 20 or so companions and wander around with them. Next time you get ambushed, the bandits/goblins will match your numbers, and you'll have a massive army to deal with (assuming your world is old enough to have bandit groups that big). Your hapless, unskilled companions will get slaughtered, leaving you to do most of the work.

Peasants, in my opinion, often do better than trained soldiers...

You could...get a heavy object, a brick or so, but your finger will do and press the "Surroundings" option when you talk to peasants. They will reveal the location of any notable area in their knowledge.

Sleeping out in the wilderness with a few companions usually results in an ambush after a few nights. Of course, you have to worry about goblins stabbing you in the face while you nap.
