Well i thought about it, this state really doesn't have shit on wheels for food and the restaurants blow beyond proportions. Tell yea when a restuarant cooks worse than fast food you know its a problem. Now as a cook i can't handle this anymore, I will not stand for this anymore! As of now im putting a application for food service, rigging my trailer and starting a food truck business. This shall detail my trials and errors, this shall be a new page of history! (doubt that far but i might make a dent :P)

Choices of cuisine:
really i can cook anything now as long i got a recipe idea in my head. Now i need something that can be made quick n easy.

Needs of the customer:
Biggest thing ever. So far this city has no breakfast joint, no bagel shop, not even good asian takeout, these are easy markets to tap into.

Equipment:
A grill, a burner, cooler, generator, propane and propane accessories, a trailer.

No i was specifying markets i could tap into like breakfast or asian or bagels. i would have no idea what i would get for combining them and god that creation would scare me.

I would go with a rolling Teppanyaki grill. Or a Mongolian Barbecue.

The only thing he really couldn't do is Bourbon Chicken, what with open containers in vehicles and whatnot. You'd probably have to ask Truean.

Well, I guess you probably actually could do Bourbon Chicken. It's marinated in bourbon whiskey, so you wouldn't need to bring the bottle with you, just the marinated chicken. Although, you wouldn't be able to make more onsite.

Anyway, cut up some chicken into bite sized pieces, marinade in bourbon, red wine vinegar, brown sugar, garlic, a little bit of soy sauce, and a dash of ground red pepper for a few hours, then pan fry it. Lovely stuff. Some people use onion and ginger, as well.

Edit: Or not. Oh, well.

Editedit: You know what would be mega-badass? A chicken wing truck. All you'd need is a few fryers, some chicken wings, bowls to sauce them in, sides, and pop fountains. Boom, instant wings, just add awesome.

But see that area is covered to well around here, theres places called Wingers Grill and they just opened a Buffalo Wild Wings down at the Marketplace in Lehi.
