Be more specific - what kind would you like to try to make?

Make a Trap of some sort
While you're at it, make a bucket. If not for the blood, it'll be useful anyway.

The moment the lever was pulled, somebody's pet kitten stepped onto the bridge. I read somewhere that if a cat falls more than 11 stories, it instinctively flares its legs out to increase air resistance. This slows it down enough to stick the landing with relatively minor injuries. In Dwarf Fortress, apparently, cats don't do that.

And the block the opening with that log.
You'll need a carpenters workshop to make a hatch, as well.

This game won't work EXACTLY like DF. (for example, crossbows being made in a carpenters workshop).

You could probably move a boulder or something over the hole, but the raw wood you've got now really wouldn't pose any sort of barrier. You'll have to work it into planks first. Which still requires a workshop.

Still. Dorfs can conjure alcohol out of nearly any plant matter.

But they still need barrels or a container for the booze!

Technically, you need a barrel just to build a still.

If booze is your goal, it's going to be a multi-step process.

Unfortunately, the only liquid on the map is the blood, and that's already started to dry.

Fine I got this great idea. Obviously the outside is dangerous, and I doubt we can fight a werewolf or even run from one. What we do is simple. Dig deeper, at an angle. then digg horizontally drag our stock pile into the furtherst reaches of your hole, and then Carefully cause a cave in sealing off the entrance.

Safety. Then dig deeper.
