I locked some goblins in between two bridges, and they've been there for a few months now, but they seem to never get hungry or thirsty. I suppose that means I can't starve them out or wait till they die from dehydration?

No.  Only creatures that belong to your fortress need to eat or drink. And of those, only intelligent creatures or those with the GRAZER tag.

The funny thing is that they vomit if you hit them in the stomach despite having [NO_EAT] and [NO_DRINK] tags. *scratches head*

Dwarf Fortress tries harder than most games, but many things only make sense if you don't really think about them.

Dwarves are born drunk. They require alcohol to maintain a somewhat consistent state of mind.

There have been rumors of terrible fortress mayors who have drained all the booze from their stores and forced the dwarves to drink the foul blue liquid called water. Suffice to say, such fortresses never last long.
