Attack Speed Explanation:
1-100 = Will Always Count for a Single Attack
101 = Has a 99% Chance of Counting as a Single Attack, and a 1% Chance as Counting as two Attacks
150 = Has a 50% Chance of Counting as a Single Attack, and a 50% Chance of Counting as two Attacks
201 = Has a 99% Chance of Counting as two Attacks, and a 1% Chance as Counting as three Attacks
Certain Weapons have Different Base Speeds.
Regular Daggers tend to have a base 175 Speed, even a slower character would have a 75% Chance of attacking twice using Daggers. However, Daggers also tend to be quite weak.
Two Handed Weapons have Weapon Speeds around 50. This Doesn't mean you have a chance of not attacking at all, it only means you'd need +51 Attack Speed to even have a chance at attacking twice. However, Two Handed Weapons tend to be quite powerful.
Skills:Weapon Skills: These are all pretty self explanatory. They give bonuses, and remove penalties for using certain types of weapons.

Tower Shields: Out of the three types of shields, Tower Shields have the most Damage Resistance. However, their size means they require a high amount of strength to use.
Shields: Regular Shields, they have average Damage Resistance, and don't require as much strength to use as Tower Shields.
Bucklers: Bucklers have only light Damage Resistance, but they have no strength requirements.
Cloth Armour: Very Light armour, commonly used by Spellcasters like Mages. It has little damage resistance, but is very light.
Leather Armour: Light armour, commonly used by Rangers, Rogues, and Assassins. It has a bit more damage resistance than Cloth armour, but is also a little heavier. Requiring a bit of strength to use.
Chainmail Armour: Medium armour, commonly used by Soldiers. It has a good amount of damage resistance, but is also a bit on the heavy side. Requiring a decent amount of strength to use.
Plate Armour: Heavy armour, commonly used by Knights, and Warriors. It has a great amount of damage resistance, but is also very heavy. It requires a high amount of strength to use properly.
Gathering Skills:
Mining: Used to determine success rates for mining, and identifying mineral veins/clusters/deposits. Ores and Gems can be traded, or used for skills like Metalsmithing and Jewelrycrafting.
Herbalism: Used to determine success rates for picking, and identifying herbs. Herbs can be traded, or used in skills like Alchemy and Cooking.
Skinning: Used to determine success rates for skinning slain beasts. Hides can be traded, or used for skills like Leatherworking.
Fishing: Used to determine success rates for fishing. Fish can be traded, or used for skills like Cooking.
Woodcutting: Used to determine success rates for woodcutting. Lumber can be traded, or used for skills like Fletching and Carpentry.
Crafting Skills:
Metalsmithing: Used to determine quality of crafted metal items. Includes weapons, armour, and anything else you could think of.
Jewelrycrafting: Used to determine quality of crafted jewelery. Amulets, Rings, and the like are quite useful for trading, and can be great items to enchant for yourself.
Fletching: Used to determine quality of crafted bows, crossbows, and ammunition.
Weaving: Used to determine quality of crafted cloth items. Includes Armour, packs and bags, and anything else you could think of.
Leatherworking: Used to determine quality of crafted leather items. Includes tanned leather, armour, and anything else you could think of.
Cooking: Used to determine quality, and success rate of cooked items. Food, when eaten, aside from fending off starvation, will also give you bonuses during battle. (Provided you've eaten relatively recently.)
Alchemy: Used to determine quality, and success rate of potions, elixirs, transumations, and the like. Potions are an extremely useful type of item, providing you with a wide range of different bonuses.
Enchanting: Used to determine quality of Enchantments. Enchantments can add extra bonuses to items.
Carpentry: Used to determine quality of crafted wooden items. Includes things like containers, furniture, and even structures.
