learned to work with their alien alloys (but notably never figured out how to produce it)
actually, you can produce alien alloys from scratch in the game

Also, I guess the electric gun would be totally useless in X-Com 1. If only electricity helped stun things. Then a ranged weapon that did that would be totally more useful than the stunrod. But alas

Because an electric gun would be impractical. We have the technology RIGHT NOW to make an electric gun (We had that technology in WW2)

The difference however is that in the Xcom FPS you absolutely needed the electric gun and thus the impractical nature and cost was considered worthwhile. For example you developed those flame grenades in it, but why use those over a normal grenade in Xcom?

Many of the weapons were specialised for those specific aliens and their weaknesses.

The FPS games can all be non-canon and totally ignored in my opinion.

Yeah the aliens are setting up a bomb in Japan, who should we call before they set up the bomb and it goes off? XCOM!
Ok XCOM, arriving from a base in Europe, no that's fine I'm sure the aliens won't be finished before you arrive.
Oh XCOM you finally made it, the bomb is going to finish powering up in 4 turns, good thing your here to fix the problem.
And good thing the aliens don't bombard w/e with their UFO's but just spend 3 hours setting up a bomb waiting for you guys.

Stop pointing out logical fallacies with the mission and enjoy the more varied mission objectives. At least its not all just "Kill ## Alienz!"

That or the bomb was itself just a lure to force XCOM deployment into their trap.
