My forts are always very organic, so things just tend to go where they seem appropriate...
I also end up getting bored and start designating multiple pathways around the fortress.

I don'y understand. I see what you mean, but i mean things that can go anywhere, like stockpiles. I'm trying to get a more effective fortress design.

What are the bedrooms like, dormatories or 3X3's?

Do nothing but exploratory mining and digging the metals and stuff you want, and build your fortress in the space you created this way.

4x4's, actually. I find them easier to mine out like that.

Yeh, this is what i like about DF, at first you copy someone elses strategy then you unknowingly develop your own.

I have a basic design I follow, but I haven't drawn it in completely.  However, when I dig a Hall I usually focus on three things:

     1 ) Pathing
     2 ) Defense
     3 ) Pathing!!!

This means that I like to group like industries together which use the same materials.  Butcher by Tanner by Candlestick maker etc. Also, assign the butcher a room near the butchery, the tanner a room near the tannery etc. This can speed up your fortress efficiency by 200%.  When it's all laid out, it tends to resemble a ball. Geometrically, a ball provides quickest access to all points within its boundaries.  And it allows for happy-inducing constructions like water-(or magma-)falls through the fortress and a central go-to area for booze, food, etc

Oh? And what if you get a ton of Dwarves that you don't have enough beds for?

Make enough beds. Over the life of a fortress, 200 wood really isn't much.
