Butchering caged animals

I'm wondering how to butcher caged animals that have managed to fall into my cage traps. Should I release them into a sealed off room for my hunters to hunt, or is there some other way to do it without them running off? (animals are elk/badger men)

I prefer making a huge sacrifical pit with metal spikes in the bottom, then butcher them at the bottom.
But, others may have other ideas.

Elk/badger men? I am not sure if they can be butchered, but ask someone more experienced.

Then he made grudge wit about 20 other dwarfs (still don't know why - perhaps they were stealing his chair).

Elk can definitely be butchered (seeing as they are basically deer) but after checking the wiki it seems badger men cannot be.

Anything with '- men' or '- women' {I.E. animal men} are considered sentients that act as wild animals. Your dwarves have ethics, they do not eat sentients.

I have set my dwarven ethics to butchering sentients to acceptable, as such, goblin roasts!

Wait, there's a separate ethic for butchering sentients? Maybe that's why my dwarves have been so reluctant to respectfully devour their enemies...
