Octopus.

Hear me out!

It's round, but has also shapes we don't like, like tentacles (for the majority of mankind), it's also sticky with it's suction... things. It's 2 am, I do not remember the term . The meat is stringy, and it can also, depending on the species, assume different colours, which can easily include those we don't like. Specifically, we never like the colour they're hiding in when they suddenly move and give a fright!

Unfortunately, I can't think at all of what you're actually looking for, but I'm sticking with Octopus!

A skull would work for this. An adult skull has two separate pieces (the jaw and the rest of the skull), and is formed from a larger number of plates that have merged together. The jaw is attached to the skull at two points, and is fairly firmly attached yet flexible enough to chew.
That doesn't fit with the additional clues you just added though
