Octopus.

Hear me out!

It's round, but has also shapes we don't like, like tentacles (for the majority of mankind), it's also sticky with it's suction... things. It's 2 am, I do not remember the term :P. The meat is stringy, and it can also, depending on the species, assume different colours, which can easily include those we don't like. Specifically, we never like the colour they're hiding in when they suddenly move and give a fright!

HAH!

Unfortunately, I can't think at all of what you're actually looking for, but I'm sticking with Octopus!

Correct! Slightly off reasons, though.

It's body/head is round, it's tentacles are stringy, its tentacles are also sticky, and it can (sometimes) switch colors and squeeze itself into any shape it wants, which it selects based on how much they foil your ability to notice or do anything to it.

Then you don't like the colors where you can't see them. :P

Though, I had forgotten that they use colors to signal each other and stuff.

That's kind off a broad, wide-reaching riddle... I don't know the answer, so I'm going to assume it's related to WH40k. :P

No, it's not from Warhammer 40k.

I represent the deaths of many yet also the beginning of new life. I was torn down then built up. I was once loved by some, then they turned their back on me and others took their place.

A skull would work for this. An adult skull has two separate pieces (the jaw and the rest of the skull), and is formed from a larger number of plates that have merged together. The jaw is attached to the skull at two points, and is fairly firmly attached yet flexible enough to chew.
That doesn't fit with the additional clues you just added though :(
