Where to find said undead though? Could be hard to find, and undead aren't that smart either, so while your plan might work in the short term, in the long term, we will just get swarmed by guards and adventurers and the like. Goddamn paladins man...

We are in the middle of a city full of necromancers, we deanimated two skeletons on the way inside, we are in a city full of necromancers, there is a graveyard that they will likely let us take from, we have a necromancer to raise undead, we are in a city full of necromancers.

I vote unliving dominion.

With unliving dominion, we have a valid excuse to get Dothki to get us a use-per-day spell to summon undead, which would conveniently let us feed ourself.
So I am voting that.

so far it looks like you're going for Unliving domination. Or the tempting box.
I put a detailed explanation below if you want specifics, but the short summary of the spell is it makes the target undead a kind of pseudo-Flesh Golem, under you're control.

 To clarify how it works you detach one or more of your souls and ten PP per soul and send them into the body of a zombie/skeleton/ what ever, These souls then take control of the undead. You maintain control of these detached soul through a psychic link similar to the necromatic link you and Dothki share. some of your souls (4 of them) have their own personality and skills and can use said skills in the possesed undead,
If a possessed undead goes to far from Elena the controling soul will detach from the undead and return to Elena. While you "command" the undead with your souls it's possible your control will be less domination and more suggestion if the undead is too strong. For an example a zombie could be totaly dominated with a single soul while a vampire would need three or more. Whats more Undead possessed by your souls will gain Strength from them in the same way you do. SO the power points would Flow like
Dothki> Elena> Dominated Undead.

The box is schrodingers box. There is nothing in the box until it is opened and observed. Kicking the box will simply result in a sore foot.
(i haven't rolled for the box and I won't unless you choose it. Even I don't know what's in the box. It's That Mysterious.)

Varol-Zarg's hand starts crackling with dark energy. With a quick thrust he rams his Spell-phallus directly into your moist, tender brain meats, Instantly teaching you the spell. There is no way anything here could be a double entendre.

"Alright thats done. Now lets go get dothki shall we?"
Varol-Zarg waltzs over to a nearby closet and opens it revealing a rather annoyed Dothki, who appears to be bound and gagged. Varol unties and ungags him. Dothki looks mighty Pissed about being dropped in a room filled with vampire, zombie and skeletal maths professors who were expecting Dothki to give a speech on his groundbreaking theory of how to divide imaginary numbers by zero. HE becomes even more pissed when he finds that someone else did work on his golem. But since Dothki isn't a total moronhe manages to keep his mouth shut.

With both Elena and dothki in The office Varol-Zarg takes his seat behind his desk and says seriously
"since both of you passed my tests I'd like to offer you some jobs, or rather quests. You see due to certain aspects of my nature It would be troublesome for me to leave this city, so While there are many things I would prefer done outside the walls I must let them go undone. However you two managed to prove yourselves to both capable and Trustworthy, to an extent. So I'll give you the Option to act as my proxy, should you so wish it, and run tasks which i need done, for Suitable compensation of course."

He watches two of you expectantly, waiting for an answer.
