Well that's good and all, except according to my stocks (And experience having my smelters smelt Hematite nearly nonstop) I have over a hundred iron bars! What the Hell, Urist?

Make sure the iron is in a stockpile close to the forge. Maybe is inaccessable or being used in buildings?

It's in my roads. I thought that once a bar of iron was used it would disappear from the stock screen but nah, I hit tab on the stocks and (Z)oomed to one of the bars and it took me straight to part of my road. Guess I'm diggin' for hematite!

it disappears from your selection menu, but since you still "have" it, its still in your stock (yellow number/red number)

Since your road can be deconstructed and yield the bars that went into it those bars still exist.

This is why I never make metal buildings out of bars - I always forge them into blocks first.

P.S. If you don't get this note, let me know and I'll write you another.
It's amazing how dwarves can make a stack of bones completely waterproof and magmaproof.
It's amazing how they can make an entire floodgate out of the bones of 2 cats.

You can also see which bars are availalbe/which are in buildings in the stocks menu: when you hit tab, the built items are in blue text, the available ones are in white text. Unfortunately, the summary version only tells you how many you have, and doesn't split them into available/unavailable categories (like the "bars" class of items does with the white/red numbers).

There is an argument for building with bars instead of blocks, if you intend to use the building temporarily, and want to get the metal back later. Though for something temporary, I'm not sure why you'd use metal for it.

There's also the "<material> wall" vs. "<material> block wall" bit, but that's just a question of aesthetics.

Actually, if you have a lot of iron ore available, it the best way to reach the requirements for becoming a capital. A 10x3 road made of stone is worth 150-300 dorfmoney, while same road made of iron bars is 1500-2500 depending on quality (though mastercraft road should cost a lot more I guess). Silver or gold road are both more expensive and stylish, but I never have enough of these metals, or if I do - there are better uses for them.

i feel exactly the same way as you do if you switch out the word "iron" for "gold" and vice versa.
