Suddenly, there's tallow EVERYWHERE!
What do you usualy do with your tallow?

In the early days of the fortress I use it to train cooks. After that I dump most of the fat and keep selected animal tallow available for soap.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

I just let it pile up until dwarves start dying from infection. Then I'll make a single bar of soap and laugh as each dwarf is cleaned using the same soap that Urist Mcdiedfromacid used to clean himself seconds before he became a puddle on my dining room floor.

If you install the latest version of dfhack, you will find a "drybuckets" utility which can be used to deal with that problem as it arises.
Also, you can turn off "auto kitchen" in Workshop Orders (though you'll probably want to apply this binary patch first so you can tell whether or not it's enabled).

An in-game workaround for the tallow issue is to start a 'Render fat' job and then suspend it immediately. This has to be done for each kitchen, and is permanent and allows for manual processing of fat.

There's also an in-game workaround for the lye-in-bucket problem. Milkers empty buckets before they use them, so forcing them to use the useless buckets first makes the buckets full of milk instead. Then you process it into cheese, and the bucket is empty again. It's a pain in the butt, use DFhack instead.

My dwarves render it at the kitchen (automatically) and then use it to cook (manually).  It never seems to pile up much.

My orcs ball it up with straberry jam and call it a meal.
I'm thinking about making a oil mod using tallow though...

Same here.  I have oodles and oodles of tallow meals made of nothing but different types of tallow.  I've never had a problem with my stockpile overflowing with the stuff.  Also never had a problem making lye out of it.  I must just be lucky.

You can avoid the water and lye in the same bucket problem if you build your soap making industry rather far away from your well and hospital, and also have 2 seperate stockpiles just for buckets, one at the well, and one at the soap making area. Then just make a ton of buckets so each stockpile is full. They will go for the closest bucket near them. I never see water in the lye area.

My Soap industry is set up as such

bucket only stockpile
barrel only stockpile
Wood only stockpile
WoodBurner > ash only Stockpile
Ashery > Lye only stockpile
Tallow only stockpile
Soap Shop > Soap only stockpile

Then I have the soap stockpile at the well take from the soap stockpile at the soap making area.

As long as you have
1. Wood supply
2. Butchering Animals regularly(for Fat to make Tallow)
You can have endless soap.
