So I guess suggesting Freespace (1 & 2) and the X-Wing Series (X-Wing, Tie Fighter, X-Wing Alliance, X-Wing Vs. Tie Fighter) is out of the question? Those are great space sims.

None of those are sims, though. They are just WW2 style fighter planes... in space.

Good, fun games? yes. Sims? no. It's pure arcade action, with no real simulation to speak of.

I've had a great time with 'Dangerous Waters' currently available on Steam (but the price tag is a bit high for a dated game).
It's modern submarine warfare and you will spend almost all the time looking at different sensors and sonar analysis tools, - but it has been the best simulation for me yet.
