How long does it typically take for underground trees to reach cutting height? I'm playing a desert map, so I'm really relying on trade and a large tree farm for needed wood...

No. I suppose there are similarities, but I'm fairly certain angry birds doesn't let me charge into a battalion of knights with a car made of circular saws.

  I would definitely not depend on a tree farm for short-term wood. I'm not sure of the specifics, but don't expect wood immediately, or even soon. My experience is that it takes over 2 years from germination to cutting.

It's probably easier to just breach all of the cavern levels and take down all of the trees there. By the time you're done with the wood you get there the farm should be ready, or almost so.

I've done this.  the answer is "a long time".  Treat your caravans well, and you'll get wood from them, enough to last you a season even with heavy use (say, for a glass industry).  Harvesting your farm once a year will get you through the last season, or even more: I'm running mine without elves to bring wood in spring.

Probably not what you are looking for, but DFgrow is always good for when you absolutely NEED wood...

I go with the "excavate most of a soil layer" style of tree farming, and it takes several months in-game to get to the point where I can get a usable amount of wood from it.

On average, a tree takes 1 year of game time to grow.

You need to hit a cavern layer before underground trees even appear, I suggest clearcutting the cavern first, then digging out a soil layer for later use.
